This Light No-Cook Pasta will Give You just the Boost You Want, Without Spending an Hour in the Kitchen.
1 Clove of Garlic, Diced.
1 Cup of Sun Dried Tomato, Soaked.
3 Chopped Tomatoes.
1 Date, Pitted and Soaked.
1⁄4 Small Red Onion, Diced.
2 Tbsp of Olive Oil.
1⁄2 Handful of Parsley, Chopped.
1⁄2 Handful of Basil.
1⁄3 Cup of Olives, Pitted.
Pinch of Sea Salt.
Optional: 1 Tsp of Maca Parmesan.
1. Using a Vegetable Peeler, Shave Courgette Down to Paper-Thin Noodles.
2. In a Food Processor or Blender, Pulse All Other Ingredients Until Smooth to Create Tomato Sauce.
3. Place Courgette Noodles on a Plate, Top with Tomato Sauce and Serve.
